Slow Cooker Anyday: Buffalo Chicken Sandwiches

I love stumbling across recipes that make my mouth water just by reading the description, don’t you?

I’m a fan of buffalo chicken anything, so I was super excited to find this recipe for Slow Cooker Buffalo Chicken Sandwiches on Allrecipes.com. Let me know what you think!

Note: I altered the ingredients and directions a little bit after reading the comments on the original recipe. Now the sandwiches are even yummier!

Buffalo Chicken Sandwiches
4 skinless, boneless chicken breast halves
1 (17.5-oz) bottle buffalo wing sauce, divided
1/2 (1-oz) package dry ranch salad dressing mix
2 T butter
6 French or hoagie rolls, split lengthwise
Cheese (e.g., pepper jack, provolone, crumbled blue cheese or even blue cheese dressing), optional
Lettuce, optional

Place the chicken breasts into a slow cooker. Add 3/4 of the wing sauce, ranch dressing mix and butter. Cover and cook on low for 5 hours. Remove the chicken, shred it and return to the slow cooker. Cook on low another 2 hours. Pile the meat onto the rolls, top with cheese and lettuce and splash with the remaining buffalo wing sauce before serving.

P.S. I’d double the recipe for our family. Four chicken breast halves wouldn’t cut it; plus, we love leftovers!

P.P.S. UPDATE: I made this the other night and it was WAY too spicy for most of the family, even after we slathered the sandwiches in ranch and bleu cheese dressing. Make sure you choose a mild buffalo sauce if you have family members averse to having their mouths on fire!

    Totally going to try this recipe! My family doesn’t love spicy food so I may have to eat the leftovers, but still….looks so yummy!
