Pinned & prepped: Tomato basil Parmesan soup

I usually don’t make many New Year’s resolutions, and by “many” I mean “any.” But this year I decided I needed to do more than just pin things on Pinterest—I should actually make things I pin on Pinterest.

Of course, the easiest board to start with is my food board. Don’t get me wrong, I love pinning crafts but actually crafting them gives me a slight case of the hives.

This week I made a slow cooker tomato basil Parmesan soup…and it was delicious. (Of course it was or I wouldn’t blog about it. That would be like asking you to smell something I had just told you smelled really, really nasty.)


Easy to make with very little prep other than chopping a few veggies. Now that’s my kind of crock pot recipe and my kind of soup!

The family loved it and the leftovers were just as good. Definitely pin this, and if you don’t pin it, print it! You can find the original recipe on 365 Days of Slow Cooking.

I’ve listed the ingredients below to give you an idea of what you’ll need. I often like to know the ingredients so I know if I can make it without making a trip to the grocery store. Of course, this one is worth the trip!

Canned diced tomatoes
Celery
Carrots
Onion
Dried oregano
Dried basil
Chicken broth
Bay leaf
Flour
Parmesan cheese
Butter
Half & half
Salt
Black pepper

    Mmm, I love soup. This one looks delicious. I like the idea of Pinterest, but it so overwhelms me! So many great ideas, so little time… I’ll just live vicariously through you while you try out all your pinned recipes, k? ;) At least while I’m a law student.

    That looks yummy! I came here to find your pesto/cream cheese dip recipe so I could tell you we tried it and DIED over how good it was, and then I got all starry-eyed and lost in this post. I’m going to bed now before I raid the fridge. (As if I haven’t already done that 3 or more times tonight!)

    Isn’t that dip just so yummy! And you have all the ingredients on hand if you stock up on pesto from Costco. :) I love raiding the fridge and do it at all hours of the day and night…
