Back-to-school treat: Chocolate marshmallow cookies
Today’s back-to-school cookie recipe is by Carrian from Oh Sweet Basil. Her cookies feature chocolate and marshmallows—I’m in heaven already and I haven’t even tried her chocolate marshmallow cookies yet!
I love school. I truly do. If I could I would even head back to college for another degree. I love learning something new and busting my tail to accomplish an assignment, test or whatever it may be. At the end when you get that great grade and you know that you did everything you could have to achieve it, well it feels fantastic. I’ve always enjoyed that part of school, it was the social part that I hated.
The social scene in school was hard for me growing up. I struggled with finding really good friends and feeling confident in my own skin. Girls can be mean and sometimes, they can be really mean. But don’t forget the boys because they can just be stupid and total jerks sometimes. I had far too many cry your heart out moments after school. There was a specific group that just loved to pick on me. In fact, these girls had real attitudes and it started young for them. Back then, it crushed me, these days, I find it sad. Thankfully I had an amazing mom and dad. They kept me at peace even when I felt I couldn’t take it anymore. Don’t get me wrong, I still really struggled with how mean these people were, but I knew that I had worth. And I am determined to make sure that not only do my children feel that worth, but the people around me too.
These chocolate cookies make me happy. Simply happy. One day my mom took me to the mall to help my sister find something for school, and at one point she took me aside and bought me a chocolate and marshmallow cookie. Mom told me that those kids didn’t matter. All that mattered was trying to find something good about each of them and to pray that one day their hearts would be changed and they would grow up. She told me that I was meant to be a good friend to those around me and that I should always try to let my own light shine. That day made my heart soar. These cookies remind me of that feeling. We all are worth more than we even know, and we should be doing everything we can to make others feel that way too.
These cookies are being saved for my daughter’s first hard day at school this year. I will bring them out, and I will teach her what my mom taught me, and I hope that you will do the same.
Chocolate Marshmallow Cookies
1 cup softened, unsalted butter
1 cup Sugar
2 large eggs
1 tsp vanilla
2 cups flour
1/2 cup Dutch process cocoa
1/2 tsp salt
1/2 tsp baking soda
1/2 bag large marshmallows, cut in half
1/2 cup butter, unsalted, softened
1/3 cup low-fat milk
1/3 cup plus 2 T cocoa
1/2 tsp vanilla
3 to 3 1/2 cups powdered sugar (I used 3 1/2, but I specifically wanted a very stiff frosting, sometimes I like it softer)
Pinch of salt
Heat the oven to 350.
In the bowl of a KitchenAid or large mixing bowl, combine the butter and sugar. Mix until smooth and creamy. Add the egg and vanilla and mix again. In a separate bowl, whisk together the flour, soda, salt and cocoa. Add the dry ingredients to the wet ingredients and mix on medium speed until well combined.
Place the cookie dough, by heaping tablespoons on a cookie sheet. Bake for 6 minutes. Remove from the oven and quickly place the marshmallow halves on each cookie.
Place cookies back in the oven and bake an additional 2 minutes. Remove from the oven and allow to cool almost completely.
Meanwhile, mix the butter, milk, cocoa, powdered sugar, vanilla and salt until smooth. Set aside.
Frost cookies and devour like you are 5 years old again.
