Green Smoothie Week: Becky’s favorite recipe

Today’s green smoothie recipe is by Becky Olsen from Project Domestication and Utah Loves Cupcakes. I’m a huge fan of pineapple—I can’t wait to try this one!
My first few days of college were full of meeting girls from all around the country. I wandered from dorm to dorm saying “Hey!” and “What’s up, I’m Becky!” just the usual. One day I wandered into a floormate’s room and quickly noticed she was probably the exact opposite of me. Her nails were freshly painted, her hair dyed and {gasp} didn’t participate in an extensive list of extra-curricular activities in high school.
“How could we get along?” I thought. Well, I’ll spare you the details and skip to the moral of this short story. We did. We ended up being stuck at the hip much of that freshman year and beyond. Nothing was wrong with her, she just had more than appeared on that initial impression…I had found a best friend.
And that’s what this smoothie is to me: far more than meets the eye. Yes, it’s green, but you’d never guess the flavors inside scream raspberry and pineapple. It’s got this dreamy, creamy smooth texture thanks to the generous half avocado. Pineapple dominates but the raspberry flavor lingers longer. You’ll immediately feel the energy that comes from my favorite green smoothie add-in: chia seeds.
Make this today, it’s simple. And if you don’t have raspberries, any berry will work great. It’s particularly tasty with blueberries. Green smoothies for life!
Raspberry-Pineapple Green Smoothie
1 cup almond milk (vanilla)
1 cup pineapple juice*
1 T chia seed
5-8 drops liquid stevia, vanilla creme flavor
1/2 small avocado
2 cups spinach
1 cup frozen raspberries
In the order listed, place ingredients in blender. Blend on high for a minute or so until smooth. If using a Blendtec blender, use the “smoothie” setting.
* Ideally pineapple juice is frozen. If so, place in blender last.
