My first–okay, second–attempt at menu planning

I’m taking a page out of my friend Kalli’s book and attempting to plan a week’s worth of meals by the Saturday before. Fortunately my menu planning is half done every week thanks to our set theme nights:

  • Tuesday = Taco Tuesday (usually tacos but anything Mexican will do)
  • Wednesday = Waffle Wednesday (generic term for breakfast for dinner, aka “brinner”)
  • Thursday = Thursketti* (usually spaghetti but anything Italian goes)


As much as I love tacos, I was kind of getting tired of that being our main Taco Tuesday dish. The same thing goes for pancakes on Wednesday and spaghetti on Thursday. Combine those same-old dishes with my kids asking me what’s for dinner starting at 4:30pm every other day of the week has me giving this meal planning thing a shot.

So here’s what we have going on this week. I’m thinking if I share it with you, I’ll feel a bit more accountable and a bit more likely to continue with a weekly menu plan. (Don’t tell me I should plan a month at a time; I’m not sure I could take the pressure.)


Sunday
Dinner at the in-laws’—yay!

Monday
No Peek Chicken from A Southern Fairytale
Buttered rosemary rolls from Pioneer Woman
Steamed broccoli

Tuesday
Chicken quesadillas (using a rotisserie chicken for ease and flavor)
Homemade refried beans from Chef in Training
Buttermilk cornbread

Wednesday
Breakfast burritos (scrambled eggs, sausage, bacon, cheese and yes, tator tots)
Peach smoothies (aka peach freezies)

Thursday
Cheese-filled jumbo shells (I always forget about this recipe and it’s a family fave!)
Caesar salad
Garlic bread

Friday
Pizza night!

Saturday
Leftovers

    ohhh…love this…i am just going to run over here for my menu planning from now on.
    we always menu plan.
    use to do the month at a time.
    can’t. i think it’s the french in me.
    so now i am down to a week at a time.
    since i am at the store every week anyway.
    and now my new trick…having the kids actually create the menu.
    love that!
    tonight is ham and apple wraps, thank you food network mag.
    we have designated nights too…
    monday is usually a meat or chicken.
    tue is kids night as the dad is working.
    wed is sandwiches out the door as we all serve at church on that night.
    thursday is fish.
    friday is pizza.
    saturday is a rotation.
    and sunday is something on the grill.
    it helps to have parameters.
    look forward to how this works for you…

    Dude, I’ve sucked at this all summer long. Maybe next week I’ll start posting menus again, it helps so much once you get into a groove and remember how this whole thing works.

    I hope to make a habit of it. Sadly we’re already off due to a conflict tonight. The 14YO is managing Taco Tuesday so it’s much simpler than originally planned. ;)

    I decided not only do I need to do this menu business, I need to do a chore chart for me. Maybe some sort of schedule for cleaning the house so I don’t feel like I have to do it all every day. Ya know.

    I like that idea of a personal chore chart. Seriously. I may have to copy you. I look around my home and everything keeps piling up and I feel like I’m getting nowhere. Maybe if I pick a room a day or a certain chore a day (vacuuming, dusting), I won’t feel like I’m losing ground around here.
