Back-to-school treat: Oatmeal cookie pies

Today’s back-to-school cookie recipe is by Deborah from Taste and Tell. I pin pretty much every post on Deborah’s food blog. Her recipes are amazing as is her photography. I finally met her this summer and I can tell you, she’s just as sweet as her food. We may be making these oatmeal cookie pies this weekend too!

I am currently pregnant with my third child. I was at my parents’ house the other night, and my dad asked me if we had decided on a name for him yet. We haven’t, but I told him of a couple that I had been kicking around in the back of my head. With both names, he came right back at me with rhyming words, basically acting like a 2nd grader, making fun of the names. I knew it was all in fun, and it made me laugh, but it also reminded me just how careful you have to be sometimes when you name your kids!
But really, I think just about every kid gets their name made fun of in one way or another growing up. I got 2 – the first was “de-bra” (sorry I said bra on your blog, Em!) Yeah, when I was a kid, bra was the big word that made all the kids laugh. It wasn’t the most fun nickname, by any means! The second “nickname” was Little Debbie. I know that the kids were basically making fun of my name, but for some reason, this one never really bothered me. Maybe it’s because I’ve always had a weakness for any Little Debbie treat. And maybe that is what led me to be a food blogger today – who knows!!
These days, I’ll gladly take on the nickname Little Debbie. It gives me the excuse to bake up some back-to-school treats, and I’ll take an excuse to bake up cookies any day! I always loved the oatmeal crème pies. They were always my favorite (along with Nutty Bars) and are probably still my favorite today. So of course, I wanted to bake up a batch of my own!
These cookie sandwiches are a little different than the packaged ones, with a more substantial cookie. But they make the perfect lunchbox treat or afterschool snack. Or an anytime-pregnancy-snack if you are always wanting a snack like me!! Regardless, both the kids and the adults will love these!

Oatmeal Cookie Pies
Cookies:
1 1/4 cup butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
2 1/2 cups old fashioned oats
Filling:
1/2 cup butter, softened
1 (7 oz) jar marshmallow creme
2 1/2 cups powdered sugar
1 teaspoon vanilla
Preheat the oven to 350F.
In the bowl of a mixer, cream together the butter, brown sugar, and granulated sugar. Beat until light and creamy. Add in the egg and vanilla and beat to combine.
In a bowl, combine the flour, baking soda, salt, cinnamon and oats. Add to the butter/sugar mixture and mix until combined.
Shape dough into tablespoon-sized balls place on an ungreased cookie sheet, at least 2 inches apart. Bake until the edges are just starting to brown, 10-12 minutes. Let cool completely.
For the filling, beat together all of the ingredients. To assemble the cookies, spread some of the filling on the bottom of one cookie. Top with another cookie.
