Fan-Friendly Party Recipe: Rancho Dip & Cheez-It Crackers

It’s college basketball season, which means more excuses to get together with friends and family to eat lots and lots of yummy food like this rancho dip. Its creamy blue cheesiness pairs perfectly with the crunchy cheesiness of Cheez-It crackers.

Before we get into your new favorite party dip recipe, let’s talk about those Cheez-It Grooves, a new variety of cracker from Cheez-It. Of course, good luck buying just those when you hit the cracker aisle at Target.

I may have come home with four boxes of Cheez-It crackers that day.

When you’re serving a dip, you want a chip or cracker that can do it justice. The Cheez-It Grooves and the Cheez-It Big crackers are both oversized—perfect for this rancho dip. I didn’t want any fighting with the blue cheese and garlic in the dip, so I went with the classic cheese flavor for both.

And now back to the rancho dip. No matter your team affiliation or the performance of your brackets, you’ll be a fan of this dip. It’s a real winner and a total crowd pleaser.

Well, as long as you like blue cheese.

The only important thing to remember about this recipe is it requires a good few hours of chilling, so I’d make it the night before. I’m a big fan of less prep work the day of a party, no matter the sport or season.

A cool, creamy, blue cheesy dip perfect for game night or any night!

Serves: 8
Ingredients
  • 1 cup sour cream
  • 2 T mayonnaise
  • 2 T lemon juice
  • 2 to 3 green onions, chopped
  • ⅓ cup crumbled blue cheese
  • ½ to 1 tsp minced garlic
  • Salt and pepper to taste
Instructions
  1. Combine all ingredients in a bowl and chill for several hours or overnight.
  2. Serve with your favorite crackers, chips or vegetables.
